We may refer to Hanukkah as the holiday of lights but, let’s be honest, the week-long affair is all about fried foods. From sufganiyot to latkes, the city basically bursts with unique takes on these dishes for eight days. We’re not complaining, of course, but sometimes opting for a slightly healthier, made-at-home version of the traditional holiday foods actually hits the spot—which is why we’re delighted by Malka’s decision to share its own relatively simple latke recipe on Instagram.

The ingredients are easy to find: 3 to 5 large potatoes (preferably Russet), a small white onion, a tablespoon of salt (although we like them on the saltier side), one egg per potato and any neutral oil. After peeling and grating the vegetables and adding the salt, let the mixture stand for 15 minutes to release moisture. Then squeeze it all using your hands or a chinois to remove the excess liquid. Add the eggs, whisk everything together and heat up a deep pan or skillet with one to two inches of oil. Form the mixture into patties and fry until golden on both sides. The last step: eat without guilt.

Malka also shared a recipe for its cream, which obviously pairs beautifully with the patties.
