Former By Chloe owner and chef is opening a new kosher vegan restaurant in NYC

Chloe Coscarelli, the celebrity chef that opened vegan destination By Chloe to much fanfare years ago, has just announced that she will be debuting am new all-day vegan cafe aptly named Chloe tomorrow, July 16. Just like By Chloe, Chloe is certified kosher.

The move follows Coscarelli’s much talked about dramatic exit (read: forced departure) from By Chloe just a few of years ago. 

As reported widely across media outlets, ESquared Hospitality, the company that operated By Chloe, took on new investors for the business without Coscarelli’s approval in the mid 2010s. In 2017, the founder was forced out of the company. 

Fast-forward to 2024 and Coscarelli is ready to make her great comeback, opening her new endeavor at the original By Chloe address (in 2021, By Chloe filed for bankruptcy and rebranded as Beatnic) in Greenwich Village at 185 Bleecker Street near MacDougal Street. 

“As many of you know, my former restaurant By Chloe was co-opted by a deceitful partner in 2017,” Coscarelli wrote on Instagram a few days ago, announcing her latest venture. “It was an abrupt halt to what had otherwise been a magical experience. I still remember leaving our flagship store for the last time and feeling an overwhelming sense of unease. It didn’t seem right to mourn the end when I knew, deep down, that I had only just begun. Standing on the corner of Bleecker and MacDougal, I promised myself that someday, somehow, I would return. And when I did, it would be on my own terms.”

The only details about the menu that have been shared until now regard the sole use of plant-based, vegan ingredients—a move that mimics the premise behind By Chloe. 

Given Coscarelli’s choice to secure a kosher certification when working on her former restaurant, it should come as no surprise that Chloe will also boast kosher dietary regulations.

“I have a lot of friends in the kosher community, so why not serve them, too?,” the chef said to the Jewish Telegraphic Agency back in 2015. “Plus, vegan food is naturally a lot easier to make kosher because there are no animal products.”

By Chloe, by many considered a key player in local vegan revolution and a main catalyst behind the arrival of the cuisine in New York, quickly rose to fame within kosher culinary circles. Here’s to hoping that Chloe will be able to follow the same trajectory.
